- 1 can black beans, drained and rinsed
- 6 small tortillas (corn or flour)
- 1 bell pepper, diced
- 1 small onion, diced
- Juice of 1 lime
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Mash the black beans with a fork; mix in the diced bell peppers, onion, lime juice, cumin, paprika, salt, and pepper.
- Spread a spoonful of the mixture onto each tortilla, roll them up tightly, and place seam-side down on a baking sheet lined with parchment paper.
- Brush lightly with olive oil.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
