Description

Crispy, oven-baked taquitos filled with a flavorful black bean and veggie mixture, perfect for a quick weeknight meal or cozy gathering.


Ingredients

  • 1 can black beans, drained and rinsed
  • 6 small tortillas (corn or flour)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • Juice of 1 lime
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mash the black beans with a fork; mix in the diced bell peppers, onion, lime juice, cumin, paprika, salt, and pepper.
  3. Spread a spoonful of the mixture onto each tortilla, roll them up tightly, and place seam-side down on a baking sheet lined with parchment paper.
  4. Brush lightly with olive oil.
  5. Bake for 20-25 minutes or until golden brown and crispy.
  6. Serve hot with your favorite dipping sauce.
