- 1 cup mashed ripe bananas (about 2–3 medium bananas)
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
- 1/2 cup crushed graham crackers
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together mashed bananas, sugar, brown sugar, melted butter, eggs, and vanilla extract until smooth and creamy.
- Whisk together flour, baking powder, baking soda, and salt until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
- Fold in the mini marshmallows, chocolate chips, and crushed graham crackers, ensuring everything is evenly dispersed.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a cooling rack.
