Description

Delicious Banana S’mores Muffins filled with creamy banana, melted chocolate, and fluffy marshmallows, perfect for any occasion.


Ingredients

  • 1 cup mashed ripe bananas (about 23 medium bananas)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together mashed bananas, sugar, brown sugar, melted butter, eggs, and vanilla extract until smooth and creamy.
  3. Whisk together flour, baking powder, baking soda, and salt until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  5. Fold in the mini marshmallows, chocolate chips, and crushed graham crackers, ensuring everything is evenly dispersed.
  6. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a cooling rack.
