Description

Crispy on the outside and tender on the inside, these Broccoli Fritters are a delicious way to enjoy more vegetables while providing a comforting meal.


Ingredients

  • 2 cups broccoli florets, steamed and chopped
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup grated cheese (optional)
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the steamed and chopped broccoli, breadcrumbs, eggs, cheese (if using), onion, garlic, salt, and pepper. Mix until well combined.
  2. Heat a skillet over medium heat and add a generous splash of oil, letting it heat until it shimmers.
  3. Scoop spoonfuls of the mixture into the skillet, flattening them slightly to form patties.
  4. Cook for about 3-4 minutes on each side or until golden brown.
  5. Remove from the skillet and drain on paper towels.
  6. Serve warm with sour cream or yogurt.

Notes

These fritters can be made ahead of time and stored in the refrigerator. They are also freezer-friendly!
