- 2 cups broccoli florets, steamed and chopped
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup grated cheese (optional)
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the steamed and chopped broccoli, breadcrumbs, eggs, cheese (if using), onion, garlic, salt, and pepper. Mix until well combined.
- Heat a skillet over medium heat and add a generous splash of oil, letting it heat until it shimmers.
- Scoop spoonfuls of the mixture into the skillet, flattening them slightly to form patties.
- Cook for about 3-4 minutes on each side or until golden brown.
- Remove from the skillet and drain on paper towels.
- Serve warm with sour cream or yogurt.
Notes
These fritters can be made ahead of time and stored in the refrigerator. They are also freezer-friendly!
