Ingredients

- 1 cup black beans (canned or cooked)
- 1 cup rice (white or brown)
- 1 pound sausage (such as kielbasa or andouille)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 cups chicken or vegetable broth
- Fresh cilantro (for garnish, optional)
Instructions
- Sauté the chopped onion, garlic, and bell pepper over medium heat until softened and fragrant.
- Add the sausage to the pot, cooking until browned.
- Stir in the cumin, smoked paprika, salt, and pepper.
- Add the black beans, rice, and broth to the pot.
- Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 20 minutes.
- Once cooked, fluff the rice with a fork and garnish with fresh cilantro if desired.
Notes
