Description

Ingredients

  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 pound sausage (such as kielbasa or andouille)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Sauté the chopped onion, garlic, and bell pepper over medium heat until softened and fragrant.
  2. Add the sausage to the pot, cooking until browned.
  3. Stir in the cumin, smoked paprika, salt, and pepper.
  4. Add the black beans, rice, and broth to the pot.
  5. Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 20 minutes.
  6. Once cooked, fluff the rice with a fork and garnish with fresh cilantro if desired.

Notes
