Description

Wholesome and filling breakfast bars made with oats and blueberries, perfect for busy mornings.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • 1/2 cup unsweetened applesauce
  • 1 cup fresh or frozen blueberries
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Combine rolled oats, mashed bananas, applesauce, honey or maple syrup, baking powder, cinnamon, and a pinch of salt in a large mixing bowl. Stir until well combined.
  3. Fold in the blueberries, taking care not to crush them.
  4. Pour the mixture into your prepared baking dish, spreading it out evenly with a spatula.
  5. Bake in the preheated oven for 30–35 minutes, or until the edges are golden brown and the center is set.
  6. Allow the bars to cool in the pan for at least 10 minutes before lifting them out using the parchment paper.
  7. Slice them into squares, and enjoy!

Notes

For a make-ahead option, store in the fridge for up to a week. Freeze individually for longer storage.
