Wholesome and filling breakfast bars made with oats and blueberries, perfect for busy mornings.
Ingredients

- 2 cups rolled oats
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1/2 cup unsweetened applesauce
- 1 cup fresh or frozen blueberries
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Combine rolled oats, mashed bananas, applesauce, honey or maple syrup, baking powder, cinnamon, and a pinch of salt in a large mixing bowl. Stir until well combined.
- Fold in the blueberries, taking care not to crush them.
- Pour the mixture into your prepared baking dish, spreading it out evenly with a spatula.
- Bake in the preheated oven for 30–35 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool in the pan for at least 10 minutes before lifting them out using the parchment paper.
- Slice them into squares, and enjoy!
Notes
For a make-ahead option, store in the fridge for up to a week. Freeze individually for longer storage.
