Description

A cozy and delightful treat combining cookie and cake flavors, filled with pastry cream and drizzled with chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pastry cream (homemade or store-bought)
  • 1 cup semisweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line baking sheets with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture.
  5. Drop tablespoonfuls of dough onto prepared baking sheets.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool completely.
  7. Use a piping bag to fill each cookie with pastry cream.
  8. Heat heavy cream in a saucepan, then remove from heat and add chopped chocolate. Stir until melted and smooth.
  9. Drizzle or spread the chocolate glaze over each filled cookie and let it set before serving.

Notes

The cookies can be made ahead of time and filled right before serving. Store in an airtight container in the refrigerator for up to 3 days.
