Description

A deliciously tender, caramelized treat that blends sweet and savory flavors, perfect for weeknight dinners or gatherings.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • ½ tsp chili flakes (optional for spice)
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. If Grilling: Preheat your grill to medium-high. Place the chicken on the grill and cook for 6-8 minutes per side, basting with the marinade.
  2. If Baking: Preheat your oven to 375°F (190°C). In a baking dish, lay the chicken, pour the marinade, and scatter the pineapple chunks on top. Bake for about 30 minutes, or until cooked through.
  3. If Slow Cooking: Place the chicken and pineapple in a slow cooker. Pour the marinade over the top and cook on low for 4-5 hours.
  4. Once cooked, garnish with fresh cilantro. Serve with steamed rice or grilled veggies.

Notes

Prepare the marinade in advance for deeper flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
