Description

Indulgent butterscotch chocolate chip cookies that are chewy in the center and crisp at the edges, perfect for family baking fun.


Ingredients

  • 1 cup butterscotch chips
  • 1 cup chocolate chips
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the butterscotch chips and chocolate chips.
  7. Using a spoon or cookie scoop, drop spoonfuls of dough onto a lined baking sheet.
  8. Sprinkle a little sea salt on top of each cookie.
  9. Bake for 10-12 minutes or until the edges turn golden brown.
  10. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. You can also freeze the cookie dough for later baking.
