Ingredients

- 8 oz pasta (penne or rotini)
- 1 lb smoked sausage, sliced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Parmesan)
- 1 cup bell peppers, diced
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned.
- Add the diced onion, bell peppers, and minced garlic. Cook until softened.
- Stir in the Cajun seasoning and cook for another minute.
- Add the pasta and enough water or broth to cover. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
- Stir in the heavy cream and shredded cheese, mixing until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
