Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cucumber, julienned
- 1 avocado, sliced
- 1 carrot, shredded
- 8 ounces imitation crab meat, shredded
- Soy sauce, for serving
- Sesame seeds, for garnish
- Nori sheets, cut into strips
Instructions
- Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rice and water and bring to a boil. Once boiling, lower the heat, cover, and let it simmer for 20 minutes. Remove from heat and let it sit for an additional 10 minutes to soak up all that goodness.
- Mix together the rice vinegar, sugar, and salt in a small bowl until dissolved. Stir this delightful mixture into the cooked rice, and allow it to cool.
- Add a generous scoop of the seasoned sushi rice as your cozy base in serving bowls.
