Delightful carrot cake bars topped with a creamy cheesecake swirl, perfect for sharing during chilly evenings.


Ingredients

  • 1/2 cup butter (melted)
  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Spray an 8×8 baking pan with non-stick spray or line with parchment paper.
  2. Whisk together the melted butter and light brown sugar until creamy.
  3. Beat in the egg and 1 tablespoon of vanilla extract until smooth.
  4. Combine the flour, cinnamon, baking powder, and salt in another bowl. Gradually add to the wet mixture.
  5. Fold in the shredded carrots.
  6. Beat the cream cheese with granulated sugar, egg yolk, and vanilla extract until fluffy.
  7. Pour half of the carrot batter into the prepared pan, then spoon the cream cheese mixture on top. Dollop the remaining carrot batter and swirl gently.
  8. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before slicing.

Notes

These bars can be made a day in advance and stored in an airtight container in the fridge. For a nutty addition, toss in some toasted walnuts or pecans.
