- 1/2 cup butter (melted)
- 1 cup light brown sugar (packed)
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Spray an 8×8 baking pan with non-stick spray or line with parchment paper.
- Whisk together the melted butter and light brown sugar until creamy.
- Beat in the egg and 1 tablespoon of vanilla extract until smooth.
- Combine the flour, cinnamon, baking powder, and salt in another bowl. Gradually add to the wet mixture.
- Fold in the shredded carrots.
- Beat the cream cheese with granulated sugar, egg yolk, and vanilla extract until fluffy.
- Pour half of the carrot batter into the prepared pan, then spoon the cream cheese mixture on top. Dollop the remaining carrot batter and swirl gently.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool before slicing.
Notes
These bars can be made a day in advance and stored in an airtight container in the fridge. For a nutty addition, toss in some toasted walnuts or pecans.
