Description

A warm and cozy chicken burrito bowl filled with savory chicken, zesty salsa, black beans, and corn, perfect for meal prep and family dinners.


Ingredients

  • 2 chicken breasts
  • 1 cup salsa (your favorite brand)
  • 1 can of black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 ripe avocado, diced
  • Cilantro lime dressing (store-bought or homemade)
  • Cooked rice or quinoa (optional)
  • Shredded cheese (optional)
  • Sour cream (optional)

Instructions

  1. Place the chicken breasts in the crockpot and pour the salsa over them.
  2. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  3. Add the black beans and corn to the crockpot in the last 30 minutes of cooking.
  4. Shred the chicken in the pot using two forks and mix it with the salsa and beans.
  5. Serve in bowls and top with avocado, cilantro lime dressing, and other desired toppings.
