- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly until everything is well mixed.
- Using a spoon or cookie scoop, drop scoops of the yogurt mixture (about 2 tablespoons each) onto a parchment paper lined baking sheet to form clusters.
- Place the baking sheet with the yogurt clusters in the freezer. Freeze until completely frozen, about 1 to 2 hours.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring until melted and smooth.
- Remove the frozen yogurt clusters from the freezer. Carefully dip each cluster into the melted chocolate using a spoon.
- Place each chocolate-covered cluster back on the prepared baking sheet. Optionally, sprinkle a pinch of sea salt on top.
- Return the clusters to the freezer for a few minutes to allow the chocolate to harden.
