Ingredients

  • 1 cup rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 ripe avocado, sliced
  • Creamy cilantro lime sauce (store-bought or homemade)

Instructions

  1. Marinate the steak by combining lime juice, cilantro, salt, and pepper in a bowl. Let it marinate for at least 15 minutes.
  2. While marinating, cook rice according to package instructions and mix in lime juice and cilantro.
  3. Grill or pan-sear the marinated steak until desired doneness. Let rest before slicing.
  4. Assemble the bowls starting with cilantro lime rice, topped with black beans, corn, avocado, and sliced steak.
