- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tbsp honey
- 1 egg
- 1/2 cup corn kernels
- For Honey Butter Glaze: 1/4 cup melted butter
- 2 tbsp honey
Instructions
- Preheat your oven to 375°F and grease a mini muffin tin.
- In a mixing bowl, combine yellow cornmeal, all-purpose flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, melted butter, honey, and egg until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Fold in the corn kernels.
- Fill each muffin cup about 3/4 full with the mixture.
- Bake for 12-15 minutes, or until golden and a toothpick comes out clean.
- Prepare the honey butter glaze by mixing melted butter and honey in a bowl.
- Brush the warm poppers with the honey butter glaze.
Notes
Make the batter a day in advance and store in the fridge. For healthier options, use whole wheat flour or dairy-free milk.
