Description

Delightful bite-sized cornbread poppers, tender and fluffy inside with a golden crust, perfect for any gathering.


Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp honey
  • 1 egg
  • 1/2 cup corn kernels
  • For Honey Butter Glaze: 1/4 cup melted butter
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F and grease a mini muffin tin.
  2. In a mixing bowl, combine yellow cornmeal, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, melted butter, honey, and egg until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Fold in the corn kernels.
  6. Fill each muffin cup about 3/4 full with the mixture.
  7. Bake for 12-15 minutes, or until golden and a toothpick comes out clean.
  8. Prepare the honey butter glaze by mixing melted butter and honey in a bowl.
  9. Brush the warm poppers with the honey butter glaze.

Notes

Make the batter a day in advance and store in the fridge. For healthier options, use whole wheat flour or dairy-free milk.
