Ingredients

  • 8 oz bowtie pasta
  • 2 chicken breasts, boneless and skinless
  • 2 cups broccoli florets
  • 1/2 cup cowboy butter
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the bowtie pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the cowboy butter over medium heat, then add the chicken breasts, seasoning with garlic powder, salt, and pepper. Sear for 6-7 minutes per side until golden brown and fully cooked.
  3. Remove the chicken, let it rest, then slice.
  4. Add broccoli florets to the skillet and sauté for 3-4 minutes until tender.
  5. Add the cooked pasta and sliced chicken back to the skillet, drizzling with lemon juice, and toss gently to combine.
  6. Serve warm, garnished with fresh parsley.

Notes

For variations, substitute asparagus or spinach for broccoli, add cheese or lemon zest, or spice it up with red pepper flakes. Make ahead and store leftovers for up to 3 days.
