Ingredients

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted.
  4. Pour in heavy cream and stir in crumbled feta cheese, cooking until the sauce is heated and slightly thickened.
  5. Toss the cooked gnocchi in the skillet, coating them in the sauce. Season with salt and pepper.
  6. Serve warm, topped with grated Parmesan cheese if desired.

Notes
