Description

A creamy and cozy low-carb chicken casserole, perfect for chilly evenings with tender chicken and vibrant veggies beneath a bubbling layer of cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cauliflower, broccoli, cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Grease a casserole dish with olive oil.
