Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 cup spinach
  • 1/2 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts generously with salt, pepper, and oregano, then cook for 6-7 minutes on each side until cooked through.
  3. Remove chicken and let it rest while you sauté garlic, cherry tomatoes, and bell pepper for about 5 minutes.
  4. Pour in heavy cream and bring to a gentle simmer.
  5. Stir in spinach and feta cheese until combined.
  6. Return chicken to the skillet, coating it with the sauce.
  7. Serve warm.
