- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vanilla pastry cream
- 1/4 cup granulated sugar for topping
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine flour, baking soda, and salt. Gradually fold this into the creamed mixture.
- Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
- Once cooled, fill each cookie with a dollop of vanilla pastry cream.
- Sprinkle sugar on top of the pastry cream, then caramelize with a kitchen torch.
- Let cool before serving.
