Description

A delightful twist on the classic crème brûlée, these cookies feature a creamy center and a crispy caramelized sugar topping, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vanilla pastry cream
  • 1/4 cup granulated sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually fold this into the creamed mixture.
  5. Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  6. Bake for 10-12 minutes, or until edges are lightly golden.
  7. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
  8. Once cooled, fill each cookie with a dollop of vanilla pastry cream.
  9. Sprinkle sugar on top of the pastry cream, then caramelize with a kitchen torch.
  10. Let cool before serving.
