- 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
- 8 oz thick-cut Irish bacon, chopped
- 1 large yellow onion, thinly sliced
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon freshly cracked black pepper
- Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
- Optional: 1/4 teaspoon smoked paprika
Instructions
- Start by scrubbing and dicing the potatoes into 1/2-inch cubes.
- Heat a large skillet over medium heat and add the chopped bacon.
- Cook until golden brown and crispy (about 6-8 minutes).
- Push the bacon to one side of the skillet and add the sliced onions.
- Sauté the onions until softened and lightly golden (about 2-3 minutes).
- Stir in the diced potatoes and season with salt, pepper, garlic powder, and smoked paprika.
- Toss everything together until well-coated.
- Spread the mixture evenly in the skillet and let it cook undisturbed for 4-5 minutes.
- Once the crust is achieved, carefully flip the mixture with a spatula.
- Continue cooking, stirring every 3-4 minutes, until potatoes are fork-tender and crispy (about 10-15 minutes).
- Dot the top with remaining butter and broil or crisp on stovetop for 2-3 minutes.
- Remove from heat, sprinkle with parsley, and adjust salt or pepper as needed.
- Serve hot straight from the skillet.
Notes
Feel free to customize with bell peppers or cheese as desired. For dairy-free, substitute butter with olive oil.
