Description

A hearty and comforting slow-cooked dish featuring tender corned beef and fresh vegetables, perfect for family gatherings.


Ingredients

  • 4 lbs corned beef
  • 1 small head of cabbage, cut into quarters
  • 68 medium potatoes, peeled and quartered
  • 56 carrots, peeled and cut into chunks
  • 1 onion, quartered
  • 4 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon peppercorns
  • 12 cloves of garlic, minced

Instructions

  1. Start by placing the corned beef in the crock pot, and sprinkle in the seasoning packet that comes with it.
  2. Pour in the beef broth and add the minced garlic, allowing those flavors to intertwine beautifully.
  3. Next, layer the potatoes, carrots, and onions on top of the corned beef.
  4. Cook on low for 480-600 minutes or high for 240-300 minutes.
  5. About 30 minutes before it’s done, add the cabbage quarters atop the other ingredients.
  6. Once everything is cooked to tender perfection, slice the corned beef against the grain and serve with the vibrant vegetables.

Notes

This dish is best when prepared ahead. Feel free to personalize it with zesty mustard glaze or crispy toppings.
