A cozy dish of tender chicken and fluffy baby potatoes infused with creamy garlic and Parmesan flavors, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Place the halved baby potatoes at the bottom of the Crock Pot.
  2. Season the chicken breasts generously with salt, pepper, and Italian seasoning.
  3. Place the seasoned chicken on top of the potatoes.
  4. Mix together the garlic, chicken broth, olive oil, and Parmesan cheese in a small bowl, then pour over the chicken and potatoes.
  5. Cover and cook on low for 360 minutes or high for 240 minutes, until the chicken is tender.
  6. Garnish with fresh parsley before serving.
