- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Add sweet potatoes, black beans, diced tomatoes, onion, and garlic to the crock pot.
- Pour in the vegetable broth and stir in chili powder, cumin, salt, and pepper.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
- Once cooked, stir well and serve hot.
