Description

A cozy, hearty chili made with sweet potatoes and black beans, perfect for warming up during chilly nights.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Add sweet potatoes, black beans, diced tomatoes, onion, and garlic to the crock pot.
  2. Pour in the vegetable broth and stir in chili powder, cumin, salt, and pepper.
  3. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  4. Once cooked, stir well and serve hot.
