Description

A cozy and indulgent dish featuring chicken breasts stuffed with a creamy mushroom, spinach, and cheese filling, perfect for weeknight dinners.


Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (thyme, oregano, or basil)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil over medium heat in a skillet and add minced garlic and chopped mushrooms, cooking until softened.
  3. Stir in chopped spinach, letting it wilt for 1-2 minutes.
  4. Mix the sautéed mixture with cream cheese, Parmesan, salt, pepper, and herbs in a bowl.
  5. Cut a pocket into each chicken breast and stuff with the creamy mushroom mix.
  6. Season the outside of each stuffed chicken breast with salt and pepper.
  7. Place in a baking dish and bake for 25-30 minutes until cooked through.
  8. Serve hot and enjoy each creamy bite!

Notes

Make the stuffing ahead of time for convenience. Leftovers can be stored in the fridge for up to 3 days.
