- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 1 teaspoon dried herbs (thyme, oregano, or basil)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil over medium heat in a skillet and add minced garlic and chopped mushrooms, cooking until softened.
- Stir in chopped spinach, letting it wilt for 1-2 minutes.
- Mix the sautéed mixture with cream cheese, Parmesan, salt, pepper, and herbs in a bowl.
- Cut a pocket into each chicken breast and stuff with the creamy mushroom mix.
- Season the outside of each stuffed chicken breast with salt and pepper.
- Place in a baking dish and bake for 25-30 minutes until cooked through.
- Serve hot and enjoy each creamy bite!
Notes
Make the stuffing ahead of time for convenience. Leftovers can be stored in the fridge for up to 3 days.
