- 1½ lbs sirloin steak, cut into bite-sized cubes
- 1½ lbs baby potatoes, halved or quartered
- 4 tablespoons olive oil (divided)
- 4 tablespoons butter
- 5–6 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes, then season with salt, pepper, and paprika. Cook for about 15 minutes, stirring occasionally, until the potatoes are golden and fork-tender. Remove them and set aside.
- While the potatoes are cooking, season the cubed steak generously with salt, pepper, and dried Italian herbs. In the same skillet, add 1 more tablespoon of olive oil and 2 tablespoons of butter.
- Sear the steak in a single layer (you may need to do this in batches) for 2–3 minutes per side until nicely browned. Be careful not to overcook it—you want those steak bites juicy!
- Once the steak is browned, reduce the heat to medium-low. Add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute until the garlic becomes fragrant.
- Return the potatoes to the pan and toss them with the steak and garlic mixture. Let everything cook together for an additional 1–2 minutes to heat through.
- Garnish with fresh parsley and serve hot, enjoying the symphony of flavors and aromas.
Notes
For a zesty twist, add fresh lemon juice or customize with mushrooms, red pepper flakes, or sun-dried tomatoes.
