- 2 chicken breasts, diced
- 1 tablespoon ginger, grated
- 2 limes, juiced
- 4 cups chicken broth
- 1 cup mushrooms, sliced
- 1 cup rice
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the ginger and diced chicken. Cook until the chicken turns golden brown.
- Gently add the sliced mushrooms and sauté until softened.
- Pour in the chicken broth and lime juice. Bring to a gentle simmer and season with salt and pepper to taste.
- In a separate pot, cook the rice according to package instructions. Stir in the chopped cilantro once fluffy.
- Serve the soup hot with a scoop of cilantro rice.
Notes
For added heat, mix in red pepper flakes or jalapeños. You can swap chicken for shrimp or add leafy greens for nutrition.
