Description

A comforting and fragrant soup filled with tender chicken, zesty lime, and earthy mushrooms, paired with cilantro rice.


Ingredients

  • 2 chicken breasts, diced
  • 1 tablespoon ginger, grated
  • 2 limes, juiced
  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 cup rice
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the ginger and diced chicken. Cook until the chicken turns golden brown.
  2. Gently add the sliced mushrooms and sauté until softened.
  3. Pour in the chicken broth and lime juice. Bring to a gentle simmer and season with salt and pepper to taste.
  4. In a separate pot, cook the rice according to package instructions. Stir in the chopped cilantro once fluffy.
  5. Serve the soup hot with a scoop of cilantro rice.

Notes

For added heat, mix in red pepper flakes or jalapeños. You can swap chicken for shrimp or add leafy greens for nutrition.
