Description

A warm and cozy gluten-free banana bread that is naturally sweet and perfect for any occasion.


Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup sugar (or honey)
  • 1 cup gluten-free flour
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted coconut oil, then add the vanilla extract.
  3. Mix in the baking soda and salt. Add the sugar (or honey) and mix well.
  4. Fold in the gluten-free flour until just combined.
  5. If desired, stir in chocolate chips and chopped walnuts.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

This banana bread freezes beautifully! Make a double batch and stash one loaf in the freezer for impromptu treats.
