A warm and cozy gluten-free banana bread that is naturally sweet and perfect for any occasion.
Ingredients

- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup sugar (or honey)
- 1 cup gluten-free flour
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash the ripe bananas with a fork until smooth. Stir in the melted coconut oil, then add the vanilla extract.
- Mix in the baking soda and salt. Add the sugar (or honey) and mix well.
- Fold in the gluten-free flour until just combined.
- If desired, stir in chocolate chips and chopped walnuts.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
This banana bread freezes beautifully! Make a double batch and stash one loaf in the freezer for impromptu treats.
