Ingredients

  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the gluten-free graham cracker crumbs with sugar and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans, forming a lovely crust.
  4. Beat the cream cheese until smooth. Add sugar, vanilla extract, and eggs, mixing well until beautifully blended.
  5. Pour the cream cheese mixture over the crusts, filling them generously.
  6. Bake for 20 minutes or until the center is set.
  7. Allow to cool, then refrigerate before serving.

Notes

These mini cheesecakes can be made a day in advance. Neat slices can be achieved by running a hot knife under warm water before cutting.
