Description

Ingredients

  • 2 medium boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice (or quinoa)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Pinch of paprika (optional)
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 12 tbsp water (to thin)

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a pinch of paprika. Grill for about 6–7 minutes per side until the internal temperature reaches 165°F (74°C). Let the chicken rest before slicing it into strips.
  2. Steam the broccoli florets for 4–5 minutes until bright green and slightly tender.
  3. In a bowl, whisk together the Greek yogurt, light mayonnaise, minced garlic, and lemon juice until smooth. Add water as needed for desired consistency. Season with salt and pepper.
  4. Divide the cooked rice among 4 bowls. Top with sliced chicken and steamed broccoli. Drizzle creamy garlic sauce over each bowl before serving.
