- 2 medium boneless, skinless chicken breasts
- 4 cups fresh broccoli florets
- 2 cups cooked brown rice (or quinoa)
- 1 tbsp olive oil
- Salt and pepper, to taste
- Pinch of paprika (optional)
- ½ cup plain nonfat Greek yogurt
- 2 tbsp light mayonnaise
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1–2 tbsp water (to thin)
Instructions
- Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a pinch of paprika. Grill for about 6–7 minutes per side until the internal temperature reaches 165°F (74°C). Let the chicken rest before slicing it into strips.
- Steam the broccoli florets for 4–5 minutes until bright green and slightly tender.
- In a bowl, whisk together the Greek yogurt, light mayonnaise, minced garlic, and lemon juice until smooth. Add water as needed for desired consistency. Season with salt and pepper.
- Divide the cooked rice among 4 bowls. Top with sliced chicken and steamed broccoli. Drizzle creamy garlic sauce over each bowl before serving.
