- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley or cilantro, chopped (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- Heat the olive oil in a skillet over medium heat. Add the diced onions and sauté for 3-4 minutes until they soften.
- Crumble in the ground turkey, cooking until golden brown, about 5-6 minutes.
- Stir in the minced garlic and diced bell pepper, followed by the sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for an additional 3-5 minutes.
- Transfer the mixture to your prepared baking dish, spread it out evenly, and cover it with foil. Bake for 25 minutes or until the sweet potatoes are fork-tender.
- Uncover the dish, sprinkle the shredded cheese on top, and bake for an additional 10-15 minutes until bubbly and golden.
- Garnish with fresh parsley or cilantro and serve hot.
