A creamy, dreamy casserole filled with protein-packed goodness, perfect for easy weeknight dinners.


Ingredients

  • 2 cups fresh spinach
  • 1 can artichoke hearts, drained and chopped
  • 2 cups cooked chicken breast, shredded
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add spinach and garlic, cooking until the spinach is wilted.
  3. Combine cooked chicken, artichoke hearts, cottage cheese, mozzarella cheese, Parmesan cheese, onion powder, salt, pepper, and red pepper flakes in a large mixing bowl.
  4. Stir in the sautéed spinach mixture until well combined.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
  7. Serve warm and enjoy!
