- 2 cups fresh spinach
- 1 can artichoke hearts, drained and chopped
- 2 cups cooked chicken breast, shredded
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add spinach and garlic, cooking until the spinach is wilted.
- Combine cooked chicken, artichoke hearts, cottage cheese, mozzarella cheese, Parmesan cheese, onion powder, salt, pepper, and red pepper flakes in a large mixing bowl.
- Stir in the sautéed spinach mixture until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is heated through.
- Serve warm and enjoy!
