- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 2 tablespoons dried lavender
- 2 tablespoons honey
- 4 oz white chocolate, for coating
Instructions
- In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Remove from heat and add the dried lavender. Let it steep for 10 minutes.
- Strain the lavender from the cream and return the cream to the saucepan.
- Add the chopped white chocolate and honey to the cream, stirring until completely melted and smooth.
- Refrigerate the mixture for about 120 minutes, or until firm.
- Scoop out small portions and roll them into balls.
- Melt the remaining white chocolate for coating.
- Dip each truffle into the melted chocolate and place them on a parchment-lined tray.
- Refrigerate until set, then serve.
Notes
Make these truffles a day ahead and store in an airtight container. Keep hands cool while rolling to prevent sticking.
