Description

A delightful stack of marinated chicken, creamy avocado, and fluffy rice, bursting with sweet and tangy flavors.


Ingredients

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • Salt to taste
  • Pepper to taste
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. Marinate the chicken in a mixture of honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper for at least 30 minutes.
  2. In a medium saucepan, bring chicken broth to a boil and add jasmine rice. Reduce heat, cover, and simmer for about 15 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side until golden brown.
  4. Remove chicken, allow to rest, then slice into strips.
  5. In a bowl, mix diced avocado, chopped red onion, and cilantro.
  6. Assemble the stack by layering rice, sliced chicken, and the avocado mixture, garnishing with lime wedges.

Notes

For more flavor, marinate the chicken overnight. You can also use pre-cooked rotisserie chicken for a quick meal.
