Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup buttermilk (or milk + 1 tablespoon vinegar)
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the cold, cubed butter and blend it in until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. Pour in the buttermilk and vanilla, mixing gently until just combined.
  6. Turn the dough onto a lightly floured surface and pat it into a 1-inch thick rectangle.
  7. Cut the dough into rounds using a biscuit cutter or knife and place them on the prepared baking sheet.
  8. Bake for 15–18 minutes, or until golden brown on top.

Notes

These biscuits are best enjoyed warm with butter, honey, or powdered sugar. They can also be made ahead of time and refrigerated.
