Description

A heartwarming soup made with creamy potatoes, tender cabbage, and crispy turkey bacon, perfect for cozy nights.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 small head of cabbage, chopped
  • 4 strips of turkey bacon, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove it and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic, sautéing until translucent and aromatic.
  3. Toss in the diced potatoes and chopped cabbage, stirring to combine.
  4. Pour in the broth and bring to a boil. Once boiling, reduce heat and let simmer until potatoes are tender, about 20 minutes.
  5. For a creamier texture, mash some of the potatoes in the pot, then season with salt and pepper.
  6. Serve hot, topped with crispy turkey bacon and a sprinkle of chopped green onions.
