Description

A comforting bowl of Italian Sausage Pasta Soup, rich and savory, perfect for chilly evenings.


Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 4 cups chicken or vegetable broth
  • 2 cups pasta (such as rotini or penne)
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach or kale, a few handfuls
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish

Instructions

  1. In a large pot or Dutch oven, crumble the Italian sausage over medium heat. Cook until browned, about 5-7 minutes.
  2. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until tender.
  3. Pour in the diced tomatoes and the broth. Stir and bring to a boil.
  4. Reduce heat, add pasta and Italian seasoning. Simmer for about 10 minutes until pasta is cooked.
  5. Stir in fresh spinach or kale until wilted. Season with salt and pepper.
  6. Ladle soup into bowls and top with grated Parmesan cheese and fresh basil.

Notes

This soup can be made ahead and stored in the refrigerator. It tastes even better the next day!
