Description

A delightful balance of sweet peaches and spicy jalapenos, creating a one-pan meal that’s perfect for busy weeknights.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside on a plate.
  6. In the same skillet, add the diced jalapenos and peaches. Cook for 2-3 minutes until softened.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch until smooth.
  8. Pour the honey mixture over the jalapenos and peaches, stirring well and bringing to a simmer.
  9. Return the chicken breasts to the skillet, spooning sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes until cooked through.
  11. Remove from the oven and let rest for a few minutes before serving hot.

Notes

For a creamier sauce, stir in cream cheese or Greek yogurt before serving. Substitute mango for a tropical twist.
