Description

A delightful weeknight dinner featuring grilled chicken paired with creamy avocados and zesty lime for a burst of summer flavors.

Ingredients

Scale
  • 2 chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Whisk together the lime juice, olive oil, garlic powder, chili powder, salt, and pepper to create a delightful marinade.
  2. Place the chicken breasts in the marinade, ensuring they’re completely coated. Let them sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Slice the ripe avocados and cherry tomatoes while the chicken grills.
  6. Remove the chicken from the grill and let it rest for a few minutes.
  7. Serve the grilled chicken topped with avocado slices, cherry tomatoes, and garnish with fresh cilantro if desired.

Notes

Make sure to choose ripe avocados for the best flavor. Leftover grilled chicken can be stored in the fridge for up to 3 days.
