- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp lemon zest
- 8 oz cream cheese, softened
- 1 egg
- 1/4 cup butter, softened
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and lemon zest. Mix well and set aside.
- In another bowl, beat together the softened cream cheese, egg, butter, and milk until smooth and creamy.
- Pour the wet ingredients into the dry mixture, stirring gently until just combined. Do not overmix; a few lumps are okay!
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until golden and a toothpick inserted into the center comes out clean.
Notes
For variations, try adding blueberries, poppy seeds, or a cream cheese frosting on top!
