Description

Soft and fluffy muffins bursting with zesty lemon flavor and creamy richness, perfect for breakfast or an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp lemon zest
  • 8 oz cream cheese, softened
  • 1 egg
  • 1/4 cup butter, softened
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and lemon zest. Mix well and set aside.
  3. In another bowl, beat together the softened cream cheese, egg, butter, and milk until smooth and creamy.
  4. Pour the wet ingredients into the dry mixture, stirring gently until just combined. Do not overmix; a few lumps are okay!
  5. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes or until golden and a toothpick inserted into the center comes out clean.

Notes

For variations, try adding blueberries, poppy seeds, or a cream cheese frosting on top!
