- 4 large potatoes, peeled and cubed
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- Fresh cilantro, for garnish
- Sour cream, for serving (optional)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and set aside.
- Cook the ground beef or turkey in a skillet over medium heat until browned. Stir in the taco seasoning and follow package instructions.
- Combine the potatoes, seasoned meat, black beans, corn, and diced tomatoes in a large mixing bowl. Add salt and pepper to taste.
- Assemble the bowls by layering the potato mixture at the bottom. Top with shredded cheese and diced avocado.
- Garnish with fresh cilantro and serve with sour cream if desired.
