Description

A cozy and nutritious Loaded Potato Taco Bowl packed with tender potatoes, hearty meat, black beans, and colorful toppings.


Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Sour cream, for serving (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and set aside.
  2. Cook the ground beef or turkey in a skillet over medium heat until browned. Stir in the taco seasoning and follow package instructions.
  3. Combine the potatoes, seasoned meat, black beans, corn, and diced tomatoes in a large mixing bowl. Add salt and pepper to taste.
  4. Assemble the bowls by layering the potato mixture at the bottom. Top with shredded cheese and diced avocado.
  5. Garnish with fresh cilantro and serve with sour cream if desired.
