- 2 large potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon chili powder
- 1 cup cooked ground beef or meat substitute
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 avocado, sliced
- Sour cream (optional)
- Salsa (optional)
- Chopped green onions (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for about 45 minutes or until tender.
- Prepare the ground beef according to package instructions, seasoning with chili powder.
- Once the potatoes are done, let cool slightly.
- Cut the potatoes in half and fluff the insides with a fork.
- Layer the ground beef, black beans, corn, diced tomatoes, and cheese over the potato halves.
- Return to the oven for an additional 5-10 minutes, or until the cheese has melted.
- Serve hot with avocado, sour cream, salsa, and green onions as desired.
