Description

A cozy and wholesome dinner idea featuring baked potatoes loaded with ground beef, black beans, corn, and vibrant toppings for a warm, hearty meal.


Ingredients

  • 2 large potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 cup cooked ground beef or meat substitute
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Sour cream (optional)
  • Salsa (optional)
  • Chopped green onions (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for about 45 minutes or until tender.
  5. Prepare the ground beef according to package instructions, seasoning with chili powder.
  6. Once the potatoes are done, let cool slightly.
  7. Cut the potatoes in half and fluff the insides with a fork.
  8. Layer the ground beef, black beans, corn, diced tomatoes, and cheese over the potato halves.
  9. Return to the oven for an additional 5-10 minutes, or until the cheese has melted.
  10. Serve hot with avocado, sour cream, salsa, and green onions as desired.

Notes

For a unique twist, swap in sweet potatoes or try different toppings such as scrambled eggs or roasted veggies.
