Description

Quick and delightful no-bake Lucky Charms Treats that capture the spirit of St. Patrick’s Day with vibrant colors and sweet flavors.


Ingredients

  • 5 T unsalted butter, divided
  • 22 oz miniature marshmallows
  • 6 c Lucky Charms cereal
  • 12 oz white chocolate chips
  • 4 drops green food coloring

Instructions

  1. Using a paper towel, butter the bottom of a 9×13 pan with 1 T unsalted butter. Melt the remaining 4 T butter in a large microwave-safe bowl.
  2. Pour the marshmallows over the melted butter; mix to coat the marshmallows. Place the bowl in the microwave and heat for 30 seconds. Stir, then heat for another 30 seconds and stir again until marshmallows are completely melted and smooth.
  3. Gradually pour the Lucky Charms cereal over the marshmallow mixture, mixing gently but well. Transfer the mixture into the greased 9×13 pan. Run a little water over your hands and press the treat mixture evenly into the pan. Cover and cool in the fridge for at least one hour.
  4. Once set, cut the treats into 20-24 squares and place upside down on wax paper. Melt the white chocolate for 45 seconds, then stir. Melt for another 45 seconds, stirring again till the chocolate is smooth. Add the food coloring and stir to combine thoroughly.
  5. Dip the bottom of each treat into the green chocolate, making sure to coat well. Place upside down on the wax paper to allow the chocolate to cool. Serve and enjoy your festive treats!

Notes

These treats can be made a day in advance and stored in an airtight container for up to a week.
