Description

A refreshing and vibrant mango slaw, perfect for summer gatherings and a delightful side dish.


Ingredients

  • 2 ripe mangoes, peeled and julienned
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup shredded purple cabbage
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Combine the julienned mangoes, thinly sliced red and green bell peppers, shredded purple cabbage, thinly sliced red onion, and chopped cilantro in a large bowl.
  2. Whisk together the lime juice, honey, salt, and pepper in a small bowl until well combined.
  3. Pour the dressing over the slaw and toss until everything is beautifully coated.
  4. Serve immediately for a fresh burst of flavor or chill in the refrigerator for 30 minutes to let those flavors meld even more!

Notes

Make-ahead to save time, but add the dressing just before serving to keep it crisp.
