- 2 ripe mangoes, peeled and julienned
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup shredded purple cabbage
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons honey or agave syrup
- Salt and pepper to taste
Instructions
- Combine the julienned mangoes, thinly sliced red and green bell peppers, shredded purple cabbage, thinly sliced red onion, and chopped cilantro in a large bowl.
- Whisk together the lime juice, honey, salt, and pepper in a small bowl until well combined.
- Pour the dressing over the slaw and toss until everything is beautifully coated.
- Serve immediately for a fresh burst of flavor or chill in the refrigerator for 30 minutes to let those flavors meld even more!
