Description

Ingredients

  • 1 pound Chicken breasts (Cut into uniform pieces)
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 1/2 cup Kalamata olives
  • 2 cloves Garlic (minced)
  • 1/4 cup Sun-dried tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice
  • 1/2 cup Feta cheese (optional)
  • 1/4 cup Fresh parsley (optional garnish)

Instructions

  1. Prep your ingredients by cutting the chicken breasts and chopping the vegetables into bite-sized pieces.
  2. Heat the olive oil in a large skillet over medium heat, then add the chicken and sauté until golden and cooked through, about 5-7 minutes.
  3. Add the zucchini, bell pepper, and red onion, sautéing until tender yet crisp, for another 5 minutes.
  4. Stir in the garlic, sun-dried tomatoes, and cherry tomatoes along with the dried herbs, allowing the flavors to meld.
  5. Add the Kalamata olives and finish with lemon juice for a refreshing zing.
  6. If using feta cheese, sprinkle it over the stir fry just before serving, and garnish with fresh parsley.
