Description

A delightful twist on classic quesadillas, filled with spinach, feta, mozzarella, and red onion for a cozy meal.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, diced tomato, thinly sliced red onion, and a generous sprinkle of black pepper. Mix well, allowing those flavors to mingle!
  2. Lay one tortilla flat and place one-fourth of the cheesy filling mixture on half of the tortilla. Fold it over gently to cover the filling, forming a delicious half-moon!
  3. Heat a non-stick skillet over medium heat and add the olive oil. Place the folded, filled tortilla in the skillet and cook for about 3-4 minutes, or until it turns a beautiful golden brown.
  4. Flip carefully and cook for another 3-4 minutes until both sides are crispy and inviting.
  5. Remove from heat, slice into wedges, and serve warm.

Notes

Prep the filling in advance for a quick meal. Leftovers can be kept in an airtight container in the fridge for up to 3 days.
