A delightful twist on classic quesadillas, filled with spinach, feta, mozzarella, and red onion for a cozy meal.
Ingredients

- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, diced tomato, thinly sliced red onion, and a generous sprinkle of black pepper. Mix well, allowing those flavors to mingle!
- Lay one tortilla flat and place one-fourth of the cheesy filling mixture on half of the tortilla. Fold it over gently to cover the filling, forming a delicious half-moon!
- Heat a non-stick skillet over medium heat and add the olive oil. Place the folded, filled tortilla in the skillet and cook for about 3-4 minutes, or until it turns a beautiful golden brown.
- Flip carefully and cook for another 3-4 minutes until both sides are crispy and inviting.
- Remove from heat, slice into wedges, and serve warm.
Notes
Prep the filling in advance for a quick meal. Leftovers can be kept in an airtight container in the fridge for up to 3 days.
