Instructions

- Combine your creamy peanut butter and maple syrup in a medium-sized microwave-safe bowl.
- Microwave this mixture for 40-60 seconds, then stir until smooth.
- Add the blended oats to the peanut butter mixture, mixing well until thick.
- Prepare your muffin pan by lining it with cupcake liners for easy removal.
- Scoop the mixture evenly into each muffin spot, pressing down firmly.
- Combine chocolate chips and optional coconut oil in a separate bowl and microwave until melted.
- Pour melted chocolate over each muffin cup and smooth out tops.
- Refrigerate for about 2-3 hours to let them set completely.
- Store in an airtight container in the refrigerator for up to 5 days.
