Ingredients

  • 1/4 cup maple syrup
  • 1 cup chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Start by blending your rolled oats in a high-speed blender or food processor until they resemble a fine oat flour.
  2. Combine your creamy peanut butter and maple syrup in a medium-sized microwave-safe bowl.
  3. Microwave this mixture for 40-60 seconds, then stir until smooth.
  4. Add the blended oats to the peanut butter mixture, mixing well until thick.
  5. Prepare your muffin pan by lining it with cupcake liners for easy removal.
  6. Scoop the mixture evenly into each muffin spot, pressing down firmly.
  7. Combine chocolate chips and optional coconut oil in a separate bowl and microwave until melted.
  8. Pour melted chocolate over each muffin cup and smooth out tops.
  9. Refrigerate for about 2-3 hours to let them set completely.
  10. Store in an airtight container in the refrigerator for up to 5 days.
