- 1/2 cup oats
- 1/2 cup plant milk
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 400°F (200°C).
- Add banana, oats, plant milk, maple syrup, chia seeds, vanilla extract, baking powder, coconut sugar, and cinnamon to a blender.
- Blend until smooth and creamy.
- Pour the mixture into an oven-safe ramekin.
- Bake for 20-25 minutes until golden.
- Dust with cinnamon and sugar, then cool on a wire rack.
Notes
For an added twist, mix in blueberries, swap vanilla for almond extract, or add nut butters. Store leftovers in the fridge for up to 3 days or freeze for later.
