Description

Ingredients

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¼ cups (250g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup fresh raspberries (or thawed frozen)
  • 2 tablespoons sugar
  • Optional: ½ teaspoon lemon juice

Instructions

  1. Make the Raspberry Swirl: Mash the raspberries with 2 tablespoons of sugar and optional lemon juice until it forms a thick puree and set aside.
  2. Prepare the Cookie Dough: Whisk together flour, baking soda, and salt. Cream together softened butter and granulated sugar until light and fluffy. Add egg and vanilla, then gradually mix in dry ingredients.
  3. Add the Raspberry Swirl: Fold the raspberry puree into the cookie dough to create a marbled effect.
  4. Scoop and Bake: Preheat oven to 350°F (175°C). Scoop dough into tablespoon-sized balls on parchment-lined baking sheets. Bake for 10–12 minutes until edges are golden.
  5. Cool and Serve: Cool cookies on baking sheet for 5 minutes before transferring to wire rack. Enjoy warm or cooled!
