Description

A comforting soup inspired by the classic flavors of Shepherd’s Pie, combining tender beef, vegetables, and creamy mashed potatoes in a warm, cozy bowl.


Ingredients

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 cup shredded cheese
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until translucent and fragrant.
  2. Add the ground beef to the pot, cooking until browned. Drain excess fat if necessary.
  3. Stir in the mixed vegetables and cook for a few minutes until tender.
  4. Pour in the beef broth and bring to a rolling boil.
  5. Reduce the heat and add the creamy mashed potatoes, stirring until well combined.
  6. Mix in the shredded cheese gradually, stirring until melted and smooth.
  7. Season with salt and pepper to taste.
