- 2 cups mashed potatoes

- 4 cups beef broth

- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until translucent and fragrant.
- Add the ground beef to the pot, cooking until browned. Drain excess fat if necessary.
- Stir in the mixed vegetables and cook for a few minutes until tender.
- Pour in the beef broth and bring to a rolling boil.
- Reduce the heat and add the creamy mashed potatoes, stirring until well combined.
